- 4 chicken breast, boneless, skinless
- 2 cups all purpose flour
- 1/2 cup parmesan cheese freshly grated
- 4 large eggs
- 2 cups bread crumbs
- 1 cup olive oil
- Tomato Sauce
- fresh basil for garnish
- salt and pepper
Place all chicken breast in a bowl and season well both sides with salt and pepper.
Dredge each breast in flour make sure to tap off the excess. dip in egg and then dredge in the bread crumbs.
pour olive oil in two large saute pans on high heat. Cook chicken breast until golden color on both sides.
when all chicken breast are cooked place them on a baking sheet and top each breast with tomato sauce, salt, pepper and cover with grated parmesan.
Bake until cooked and cheese melted. from 6 to 8 minutes. Remove from oven and garnish with basil leaves.
